Spicy Pumpkin soup

OK, Halloween is long gone and I don´t know about you but I still have loads of pumpkins sitting around the house to be savoured. Here is one of my favourite pumpkin soup recipes: 4 portions Cooking and preparation time: 30 minutes Ingredients; 1 pumpkin, cut in pieces 1 chili pepper or 1 tbspn of sambal oelek 3 tbspn olive oil, rapeseed oil, coconut oil or any other favourite cooking oil of your own choice 2 garlic cloves, finely sliced 2 onions, cut in pieces 2 tspns curry powder 8 dl bouillion – I prefer vegetable bouillon, other people chicken 1 cup of creme fraiche, or if you are lactose intolerant use goat quark, soy cream or oat cream If you haven´t already, you start with cleaning and peeling the pumpkin. I find it easiest to do that with a potatoe peeler, but I am open to any other tips out there which anybody would like to share as I am anything but a “kitchen queen” :-). Swedish / Ärlighet

Varför följer vi inte våra drömmar? Vad håller oss tillbaka? Varför låter man saker som egentligen är alltför små och triviala ta över? Varför är vi så bra på att kritisera, att tala om för andra och oss själva vad de och vi inte är bra på, vad som kan förbättras och ”måste jobbas på” , istället för att se våra talanger, våra passioner, vårat skapande och ge just det uttryck i livet? Hur svårt är det egentligen att möta varje dag med ett leende, och helt enkelt vara en rockstjärna, en astronaut, en trädkramare, världens bästa hacker,Jultomten, Moder Teresa eller Kungen av halfpipen så fort vi vaknar? Innan du ger svar på den frågan med ett ”ja, men….” , så ställ dig sjäv först frågan ; ” har du verkligen, med hela din kropp, själ och ditt varande, till ett hundra procent och utan ett uns av tvekan försökt, verkligen försökt?” Inte jag i alla fall. Ännu. Dags för steget från dröm till verklighet…..

Tzatziki

This tzatziki with fresh mint and lemon is just heavenly! I got the original recipe from a friend who served it at a bbq last summer. Yesterday – in the middle of winter – I enjoyed it next to the tomatoe and olive salsa and the yummy,fun and healthy main course Stephanie had prepared as a test for our next cooking workshop. And it was heaven! Which means, it is time to share it with all of you! 4 portions Ingredients: half a cucumber salt 3 dl greek yoghurt – if you are lactose intolerant,you can use goat yoghurt or quark 1 garlic clove, crushed 2 tbspns fresh mint, chopped 1 tspn lemon zest 1 tbspn olive oil freshly ground pepper Start with grating the cucumber roughly. Put the grated cucumber in a sif and sprinkle some salt over it. Allow it to sit for about 20 minutes. Once the 20 or so minutes have passed, squeeze all the liquid you can out of the cucumber. Tomatoe and olive salsa

It seems to be the week or months of little nice side dishes all of a sudden , eh 🙂 !? Yesterday I tried this one next to one of the courses Stephanie and I were testing for our next cooking workshop and next to being fast and easy to make, it was extremely tasty and of course veeeeeeeeeeeeery healthy. 4 portions Ingredients: 12 cherry tomatoes or 3 large tomatoes half a cucumber 2 spring onions 1 crushed garlic clove 1 dl chopped, fresh basil 1 dl chooped black olives 2 tbsnpns freshly squeezed lemon juice salt & pepper The original recipe said to slice the tomatoes in small cubes and remove the pits but I left the pits in, which gave it more of a “salsa-feel”. Plus I also feel it tastes more like tomatoes as well with the pits in. Anyway, do slice your tomatoes in little cubes :-)… Do the same with the cucumber (also here it said to scrape out the seeds of the cucumber but I left them in). Chop …

News / Cooking and Nutritional workshop on vitamin D

Saturday 30th of November, 14.00 – 17.00 Haarlem, The Netherlands In this workshop we will learn how to cook yummy, fun, healthy and easy to make food with the theme of vitamine D. Next to the cooking we will also learn a lot, during the interactive lecture, about Vitamin D – why this vitamin is of vital importance to us, how we can make sure we have a good – and yummy – supply of it now that the days are getting shorter and the sun is taking a vacation. Grilled and marinated veggies

Here´s another one of my favorite side dishes. While great for on the BBQ, you can also use your indoor grill if you have one or the oven grill. This recipe does have a few extra steps, which makes it easier to use the BBQ or the indoor grill but with patience of course the oven grill is fine too! For the vegans and vegetarians among us, just leave the sardines out. You can make plenty of this dish and keep it in the fridge to serve with any type of protein you are cooking for lunch, dinner or bring it on that picnic, boat ride, cross country skiing outing, ballon ride, day on the beach, hike up to the top of the mountain, you name it…. This recipe is for 4 portions. The yummiest and superhealthiest goji sweets

This has become one of my favorite recipse to make when I want to bring something for a friend or just cheer myself up on a rainy day. These goji “bullets” are great as a small snack, as a sweet next to your coffee or tea or as a dessert. The original recipe I found online, when Stephanie and I were looking for inspiration for our “Yummy, Fun and Healthy Snacks” workshop this spring. Ingredients: 0,5 dl almonds 2 tblspns dried gojiberries 2 tblspns pumpkinseeds 2 tblspns berry juice (of course without sugar!) 20 gr dark choclate , 85 % Maybe 1 – 2 tspns chiliflakes Let the gojjiberries soak in the juice for about half an hour to absorb all the liquid. After that, add the almonds, gojjiberries and pumpkin seeds to a kitchen aid or a mixer and mix it until you have a smooth paste. Roll little bullets or balls from the paste. Buddhi, The Power To Choose

One of the four functions of the mind, according to yoga philosophy, is Buddhi. Buddhi is the part of our mind which “knows, decides, judges and discriminates” to quote Swami Jnaneshvara Bharati who has the most comprehensive study program and website out there on Traditional Yoga. To train your Buddhi – well, to first become aware of its existence and then noticing its workings and from there on training it – I have to say is for me what brings me in the direction of Joy, Peace, Balance or whatever you may call it yourself. Whenever I forget to train or even to observe my Buddhi, that is when it feels like my life starts falling apart, when I get overwhelmed, swallowed up by the world with all its issues and whims. After some time the moment comes back when I realize that it is not the world with its issues and whims which I am getting caught up in, but instead, somewhere in there, in the mind world, there were choices made to be swept …

Swedish / Krossat glas

Hur ofta har du inte frågat dig “vad ska jag göra nu?”, ” vad ska vi hitta på?”. Hur många gånger under ett alltför stilla jul eller sommar-lov har du inte suckande tittat dina föräldrar, syskon eller kompisar i ögonen och bara pustat ut ett ”jag har inget att gööööraaaaaaaaaaaaaaa”…. Och hur ofta gör vi inte saker och ting bara för det ”ska” göras så eller det ”ska vara så”. Vem är det egentligen som har bestämt att när det är lördag eller söndag så ska man helst fika, shoppa, dricka vin, gå på film, ”göra helg-grejer”? Vad är det som får oss att stå på yogamattan på morgonen istället för på förmiddagsrasten eller under lördags kvällen? Hur kommer det sig att man ska läsa tidningen eller lyssna på Ipoden på bussen, för man kan ju inte ”bara åka buss”? Det kanske är min söndagsgrej, men tankarna och frågorna snurrade runt i huvudet idag när jag var ute med hundarna. Givetvis börjar resonemanget hos en själv, hur mycket yoga, meditation, soul searching och ”mind-questioning” man …
