Mango salsa, yes!

I know it is in the middle of autumn, but somewhere on the globe the season is different and I just love this little “salsa”/side dish/salad too much not to share it with you guys right now. Plus for us here in the colder hemishpere at the moment, this yummy gem will provide us with enough immune boosting anti oxidants, vitamins and capsaicin to keep all those winter colds and coughs at bay. Not to mention all the additional benefits of the fresh herbs too , aiding digestion and more. Ingredients: 1 mango 1 mild chili pepper (if you´d like it hot, of course you get a hot chili pepper 🙂 ) 1 red capsicum 2 spring onions 3 tbspns chopped fresh mint 3 tbspns chopped fresh coriander 1 lime Slice the mango in small cubes and put it in a bowl. Blueberry & Tomatoe Salsa

This might sound like a really crazy title, and so be it… It was one of the first “healthy” recipe´s I ever tried to make, so once you´ve seen how extremely easy this is you all understand how much I had never been in to cooking before I got on this journey 🙂 . That day it was one of the side dishes of the first BBQ we hosted on our roof terrace here in Haarlem. Well, that was almost 6 years ago and I still love making this one as part of more yummy salsas, salads and other small side dishes next to either a BBQ or just next to ovenbaked fish or even grilled tofu. Chicken or Tofu stew

There have been loads of snacks and smoothies posted lately so I thought that now with fall coming up and all of us getting ready for the colder seasons here in the northern hemisphere it might be time for a hearty stew. The original recipe is with chicken, but you can easily substitute it for tofu should you be vegetarian or vegan – I cook it with tofu most of the time and love it! Ingredients (serves 4); 4 chicken filets or 400 grams of tofu 4 dl crushed tomatoes 0,5 dl cooked or canned chick peas 0,5 dl cooked or canned white beans 0,5 dl cooked or canned black beans 0,5 dl cooked or canned kidney beans 1 dl of sliced champions 1 chopped onion, yellow 2 tbspn tomatoe paste 4 tbspn chicken fond or veggie bouillon 1 crusched garlic clove 2 tbspn balsamic vinegar 2 tbspn maple or agave syrup 1 tspn thyme 1 tspn chili powder cooking oil – preferably coconut oil or a mix of avocado and olive oil salt n´pepper …

Gojji, strawberry and cherry salad

Really summery and extremely healthy salad to have as dessert or next to your BBQ even. 4 portions 400 gr fresh strawberries 150 gram fresh cherries 100 gram dried gojjiberries Slice the strawberries in quarters, half the cherries and get rid of the pits, put all together in a bowl with gojji berries and enjoy! A complete “bomb” of Vitamine C and anti oxidants!

Fast, yummy and healthy lunch lentil soup

Ok, I know it is summer and at least here in The Netherlands it is hot,hot, hot and real summer today. And who would want to eat lentil soup then? I guess, rather have a lentil salad today eh…! Well, next week it will rain again and then you will be happy I have already shared one of my favorite fast lunch recipes from the health guru´s Fredrik Paulun, Martin Brunnberg and Kristina Andersson with you! So here we go: 2 portions 120 g red lentils 6-10 dl water 1 laurier leaf 800 g crushed tomatoes ( 2 jars ) 120 g red onion (1 large one) Vegetable fond 2 tbspn paprika spice 2 tspn potassium salt 4 crushed or chopped garlic cloves 4 tspn olive oil 2 boiled eggs Boil the lentils in the water with the laurier leaf for 15 minutes. Add the tomatoes, chopped onion and a bit of fond. Let it boil for an additional 10 minutes. Add the remaining spices, garlic and the oil. Serve with a boiled egg. Source: …

Antioxidant packed sunshine salad, with yummy dressing

A great and extremely nutritious salad, great as a side dish next to your protein and/or bbq and also perfect as a full meal for lunch or even dinner for the vegetarians out there. A small serving could also serve as an entrée! You can even make a triple or larger batch and keep it in the fridge to savour for days to come. Feel free to swap the chick peas for other beans or lentils as well! And why not experiment with different superfood berries like gojji, inca or mulberries instead of or next to the cranberries? Sunshine Salad 2 dl pearl dinkel, spelt, buckwheat or any colour quinoa 2 parsnips 1 carrot 1 paprika 0, 5 zucchini Coconut oil 400 g chickpeas boiled or out of a tin Saffron 1 dl dried cranberries A few twigs of flat leaf parsley 0, 5 pomegranate Boil the dinkel,spelt, buckwheat or quinoa accordingly.
