However, every now and again I try to find a recipe that I like, since a warm, gluten-free breakfast is such a treat for your body when starting off the day. A while ago a good friend of mine told me to try not only coconut oil (which I already use in, like, everything) when trying out recipes but also coconut flour. Coconut flour is great since it is loaded with nutrients and high in fibre and protein. It also contains lauric acid which supports our immune system and the mineral manganese, good for the thyroid gland. I am really honoured and happy to introduce Camilla Onell as a guest blogger here to all of you. Aside from being a beautiful person in the world and sharing her inspiring writing work on blogspot under Swedish Butterfly and One Great Mother, she is an amazing cook of healthy foods who makes our mouths water every day on Instagram. So, enjoy this, hopefully first of more to come, “scrumptious” recipe and guest blog from her! I just love sweet potatoes. For all their yummy vitamins, their rich taste and texture and not least, for their beautiful sunny colour that will improve any grey or stressful day for me. I always make a few extra sweet potatoes when I bake them in the oven (wrapped in tin foil, 200 degrees C for an hour). That way I have some delicious leftovers for a quick lunch during the week. Like this healthy, creamy sweet potato omelette that anyone could make within fifteen minutes. The recipe is for two persons or one person who is really hungry. You …
